15 Easy Vegan Recipes to Kick Off the New Year

Hello everyone! Happy last day of 2017! I hope everyone has had a wonderful year and is looking forward to the new year to come! My 2017 has definitely been an exciting one; I had the opportunity to go on holidays to the Philippines, back home to the states to visit family and friends, and just a few weeks ago, I went on our annuals girl’s Christmas shopping trip to Hong Kong. We also got a new puppy this year! Our cute little German Shepherd puppy is now a year old, and boy has she grown! So it’s definitely been a busy year, but now I’m ready for 2018! Bring it on! But I have to admit, as this holiday season comes to a close, I’m definitely starting to feel the effects of all the wine, cheese, and chocolate. So what perfect timing! New Year, new healthier me! I’ve decided for this new year that I want to try out a couple of 30 day challenges. Which is what has led us to this post. For 2018, I’ve chosen to challenge myself with Yoga with Adriene’s new TRUE: 30 Day Yoga Journey, blog post to come, and I’ve also decided to go vegan! So today I’d like to present you with 15 easy vegan recipes to kick off the new year! These recipes are not only easy, but also, delicious, healthy, and pretty, because we all want to feel good and look good, and you know as well as I do that we all eat first with our eyes! My hope is that these recipes help to inspire you to make some pretty, healthy, and delicious dishes, and if you have the desire, to even join me on this 30 day challenge!

Why a 30 day vegan challenge?

So why exactly am I going on this 30 day challenge to go vegan? And also, if your heart desires, why should you join me?

I’ve “gone” vegan a few times, in the past, and while challenging at first, I’ve always found the experience very rewarding.  Not only is it good for the animals, the environment, and your health, but it is also a great opportunity to get back to the basics and eat real, whole, homemade foods.  Living where I do in China, there are pretty much no options or opportunities to eat out while following a vegan diet.  Therefore, being vegan here takes you back to your kitchen, and allows you to really and truly know and choose what foods go into your body.  The challenge I am setting for myself is not to replace my current diet with vegan substitutes, but rather to embrace more whole fruits, vegetables, grains, and legumes, and to get creative and colorful with the dishes that I make. So if this interests you at all, please join me! Today I’ll be posting some meal inspiration via 15 easy vegan recipes, and I’ll post back next week to let you know how the first week went. Which recipes were my favorite, and any triumphs, or tribulations that I experienced.

If you think you might not be ready to try going “full vegan”, or if you’re thinking what about the rest of my family, there’s no way they’ll want to embrace this vegan challenge, then no worries. My boyfriend loves to eat clean and healthy, but he is also obsessed with chicken. So while he supports me going vegan, he’s not quite ready to try it for himself. So he’ll be having variations of what I make, just with chicken added. So I’ll let you guys know how that goes as well.
